Preparation mode
STEP 1:
Pat the chicken dry with a paper towel and season generously, inside and out, with salt and pepper. In a bowl, combine all the marinade ingredients and stir until it has a pasty consistency. Massage the marinade all over the chicken, being very careful to reach all the corners. Marinate for at least 2-3 hours.
STEP 2:
Preheat oven to 375 F. Open a can of beer and pour half into a deep baking sheet or a 10″ deep skillet that is oven/grill safe. Place the can in the center of the pan and gently place the chicken on top of the can so that the can is inside the chicken cavity and the chicken is upright and stable.
Step 3:
Transfer the pan or tray to the oven. Baste with juices and melted butter every 15 minutes after the first 30 minutes of cooking. If the wings start to get too dark, cover them with small pieces of aluminum foil. Cook until the thickest part of the thigh registers 165 F on a meat thermometer, about 90 to 110 minutes.
- Remove the chicken from the oven and cover lightly with aluminum foil. Let the chicken rest for 10 to 15 minutes before carving.
